Last week, I cured some beef arm roast into corned beef, then smoked it into pastrami. Last night I ground rye grain into flour, and cultured it. Today, baking it into pumpernickel bread. Reuben sammiches, here we come.

Not that I ever quit during the winter...but it does slow a bit...time to fire the smoker and get busy.

Seeing as how it is St. Paddy's day how do you make corned beef? I start with brisket, cure it in a seasoned brine (with curing salts) solution for 4 days. When it's cured, I slow roast it until tender.

Pan fried chicken, mashed taters, corn on the cob and a salad. The salad is just so we can feel good about all the other fattening stuff.

Mom and I had lunch with Chef Choy at When Pigs Fly today. It was great as usual. I had the pulled pork and hot links. Even saw mom eat a vegetable (corn on the cob). That doesn't happen often. It pretty much made up for trashing the company truck's engine this morning. If mom hadn't recused me, we won't have been together on the west side of Wichita. That's cause she let my boss have her car so he could go away and leave us with the mess. If you haven't been to WPF yet, give it a try.

Pulled pork sounds great. Trashing an engine sounds like not a welcome treat. Did your boss bring her car back?
